Chicken Fajitas: Perfect Meal

Hi there everyone! Today is an awesome day to prepare some Chicken Fajitas! We love them 🙂

A fajita is Tex-Mex and Mexican cuisine dish that consists is any grilled meat that is usually served as a taco on a flour or corn tortilla and  It’s also usually cooked with onions and bell peppers. The term originally referred to skirt steak, the cut of beef first used in the dish. Popular meats today also include chicken and other cuts of beef, as well as vegetables instead of meat.

Today we’re going to prepare the chicken version. So, let’s get into it! 😀 The following recipe serves 8.

What will you need:

  • 4 tablespoons fresh squeezed lime juice
  • 4 tablespoons oil
  • 2 large garlic cloves, minced
  • 3 teaspoons ground cumin
  • 2 teaspoons salt
  • 1-2 teaspoons ground chili (adjust to your desired spice preference)
  • 2 tablespoons fresh chopped cilantro (optional)
  • 3 pounds (1.5 kilograms) chicken thighs, skinless and boneless
  • 6 large capsicums, cut into strips (We advice to get green, red and yellow)
  • 2 red onion thinly sliced
  • 4 avocados, peeled, seeded and sliced

How to prepare it:

  1. In a large shallow bowl, combine lime juice, oil, garlic, cumin, salt, chili and cilantro; mix together. Add the chicken thighs and let marinate for 30 minutes.
  2. Heat a large skillet or pan on medium-high heat. Add olive oil to lightly coat the bottom of the pan. Sear the chicken on both sides until golden, charred and cooked right through (about 8 minutes per side, depending on the thickness of your fillets).
  3. Transfer chicken to a plate, loosely tent with foil and let rest.
  4. Add the peppers and onions to the skillet (drizzle with a little extra oil only if needed), and cook until the onion is soft and the peppers are slightly charred and cooked to your liking. Season with salt and pepper.
  5. Slice the chicken into strips and mix it with the rest of the ingredients in the skillet. Cook for 2 minutes.

Serve with warmed tortillas, chopped cilantro and sliced avocado.
